Smoked Salmon and Avocado Tortilla Salad Bowl


So, I am going on holiday today, and needed a quick and easy meal that will last me until I get to my destination (I have snacks for the journey in my handbag though). As many of you know, travelling with Coeliac Disease can sometimes be an absolute nightmare. 

This meal is super easy and quick to make using 1 BFree Quinoa and Chia Seed tortilla and some ingredients from the fridge!

Ingredients: 
For the Salad

1 x BFree Quinoa and Chia Seed Tortilla 

1 whole avocado

3 slices of Scottish Smoked Salmon

2 handfuls of mixed salad with spinach

4 cheery tomatoes

Ingredients:
For the dressing

half a lemon

1 tablespoon of Extra Virgin Olive Oil 

1 teaspoon of Greens Gluten Free Dark Ale Mustard

1 tablespoon of cider vinegar 

Method: 
For the Salad

Preheat the oven on the grill setting to 170 degrees 

Place the Tortilla into a dish suitable for the oven. spay some low cal spray inside the dish and a spray onto the tortilla to make it nice and crispy. 

Grill the tortilla for aprox. 6 minutes or until golden brown and holds the shape of the dish. 

Remove from the oven and let it cool in the dish to retain the shape. 

Once cooled, fill with your salad, layering the avocado, salad, tomatoes and smoked salmon. 

Method: 
For the dressing

Mix the Olive Oil and Cider vinegar together in a small bowl 

Add the lemon juice and mustard and stir until mixed

Drizzle the dressing over the salad

It looks impressive, is super tasty and can be made as a smaller portion for a starter to a dinner party using smaller ramekins and diving the tortilla.
