Skinny Banana Muffins


I have those days where I just crave a sweet treat on my cheat day. 

These Skinny Banana Muffins, made with Provena oat flour are the perfect snack for either a pre or post training snack...or if you just feel like a healthy lift. 

Ingredients: 

 1 1/2 cups Provena Oat Flour 
1 teaspoon Gluten Free Baking Soda
1/4 teaspoon salt
3 bananas (mashed)
1/4 cup honey
1 tablespoon Gluten Free Vanilla
1 tablespoon olive or coconut oil (I used Olive Oil)
1 egg
1/2 cup 0% fat plain Greek yoghurt
1 tablespoon unsweetened almond milk
1/2 cup chopped sticky dates 


Method:
Preheat the oven to 180 degrees or 160 for a fan assisted oven

Mix the flour, baking soda, salt together in a large bowl

Into a blender, add the bananas, honey, vanilla, oil, almond milk and yoghurt - blend until well combined. 

Add the wet mixture to the dry mixture in the large bowl

Mix together until you get a batter consistency. 

Divide the batter into 12 cake tins or baking cases (if you are using cake tins without cases ensure you grease the tins with low fat spray oil!).



Bake for 20-25 minutes - after this time check the muffins with a tooth pick to check whether they are cooked through

Allow to cool for 5 minutes and then transfer to a wire cooling rack. 

They are delicious, reactively healthy and great with a cup of tea!
