I love using Pulsetta products, especially their breadcrumbs.
As you can see I have used them before to create a homemade pesto crumb for chicken, but this time I wanted to make my own chicken goujons, without deep fat frying.
This is a healthier version, using organic chicken breast and it's so easy to make!
Ingredients:
2 chicken breasts
Fresh breadcrumbs (whizzed in a blender made from one slice of Genius multi seeded bread)
A handful of Pulsetta breadcrumbs
1 egg
1/2 a cup of Doves Farm Gluten Free Plain Flour
Few sprays of Light fry oil
Salt and pepper to taste
Method:
Preheat the oven to 180 degrees (170 degrees if fan assisted)
Cut the chicken breasts into half inch slices. Season accordingly (I like to season with pepper rather than salt.
Crack and beat the egg into a bowl.
Whiz a slice of Genius Multiseeded bread in a blender, and add these along with a handful of Pulsetta breadcrumbs to a separate bowl.
In a third bowl add the half cup of Doves Farm Flour.
Dip the chicken slices into the flour bowl first, then the egg and then cover in breadcrumbs.
In a pan, heat a few sprays of light fry oil and 'seal' the chicken strips. You will only need to seal them for a 2 minutes each side.
Take off the heat and place onto a greaseproof lined baking tray and pop in the oven for 15 minutes.
After 15 minutes slice a goujon in half to check that they are cooked. If not then place back in the oven until the chicken is white throughout.
Serve as you wish.
These also make a great pre/post gym snack if you are feeling peckish.
They are extremely moorish...be careful!
