Christmas Turkey, Stuffing and Cranberry Rolls - Boots

Apologies for not have blogged in a good while - to keep up with what I am doing you can however visit my Twitter and Instagram pages that are (nearly) always up to date! 

I don't know about you, but I am a massive fan of the Boots meal deal of a lunch time. I work in a busy environment and don't really get the chance to have a proper lunch break. Having said this, I do find the options in Boots a lot broader than they used to be - and now, they have introduced their Christmas Gluten Free Roll. 




Considering Boots never used to have any products I could eat, now they are so popular it's a miracle if you can get your hands on them.

Buko Coconut Jam




Coconut jam you say? No…you’ve lost me. I’d never heard of it either before a few weeks ago.
But it does exist and it’s bloomin’ lovely!
I don’t normally eat that much bread (she says) but my freezer had a malfunction this weekend and so I am  now left with a whole batch of defrosted bread (that I wasn’t expecting). So I thought why not try some of this coconut jam that is apparently all the rage?
Well I know exactly why now.
I have two versions at home – original and with added sea salt.

Now for anyone that loves salted caramel, like myself, you will really really enjoy Buko’s coconut jam with sea salt. They are a healthy version of your normal breakfast spread, and taste delicious…oh and obviously it’s gluten free.
Buko Coconut jam comes in 3 flavours, original, sea salt and chocolate and you can buy from most health food stores (Planet Organicrealfoods.co.ukAmazonhealthysupplies.co.uk to mention a few).
But you don’t just have to use it to lather on your toast….oh no no no. Why not get creative and add it to pancakes, smoothies or just dip your finger in and eat straight from the jar (OK, I admit it…that’s my favourite way to eat it!).

BFree Wraps and Pitas


I've used BFree wraps and pitas quite a few times when I have managed to get my hands on them in the supermarket.

These wraps and Pitas have multi uses, and not just for sandwiches or fajitas! 

Mini low fat Pizzas

You can use the Quinoa wraps (99 kcals a wrap) as a pizza base, I added some tomato puree, and toppings of your choice and grill until crispy. 







Home Made Tortilla Chips 

Melt some coconut oil in the microwave (about 10 seconds will do) and mix with cumin and turmeric). Cut a plain BFree wrap into triangles, using a brush, cover both sides of the triangles with the coconut oil mix and bake for 12 mins until crispy. Perfect if you fancy being naughty with some crisps, but don't want to eat those that are processed. 


Pulled Chicken Fajitas 

These were possibly my favourite! Slow cook 3-4 chicken thigh fillets in 200ml of chicken stock and BFree Fajita seasoning for 50 minutes. When the chicken is completely cooked, shred the chicken and put back in the oven for 10 minutes on a lower heat. Prep your wrap fillings (I have grilled onions and red peppers).





Healthy Pita Chips 

Cut the pita into pieces, and again, melt some coconut oil in the microwave, and brush onto the pieces. Bake for 12 minutes at 200 degrees. voilà. healthy pita chips! 



Quick Yummy Pitas 

For those times when you don't have time to think about what to eat, BFree Pitas are perfect. Grill two pitas for 2 minutes each side, cut in half and fill with pesto, salad and goats cheese. There we go, quick, easy, simple.

Cheesy Crunchy Fish Pie


One of the Joys of living on your own, is that you can eat what you want, when you want. 

I love Fish Pie, always have, always will. Although I never had it when I was at home. That was because my dad didn't like anything creamy or that had anything to do with mashed potato. 

Here's my recipe for a tasty delicious fish pie, that will go down well will all! 

Ingredients: 

1 large salmon fillet
1 large white cod or haddock fillet
 1 packet of cooked and peeled prawns 
2 eggs, hard boiled 
400ml skimmed milk
1 hanful of frozen peas
1 tsp coconut oil
2 bay leaves
30 g plain gluten free flour
4-5 large 'floury' potatoes boiled so soft
25ml of milk 
1 tbsp butter 
1 handful of grated cheddar
2 handfuls of fresh breadcrumbs 

Method:

Pre heat the oven to 220 degrees 

Bring the 400ml of milk to the boil in a pan, with the two bay leaves

Poach the salmon and cod in the milk until flaky

Remove the fish and place in the bottom of a pyrex dish. Add the prawns to the bottom of the dish

Remove the bay leaves, and add the flour and coconut oil to the milk and whisk so there are no lumps. Grind salt and pepper to taste

Add half the grated cheese to the mixture, and whisk again

Peel and quarter the boiled eggs and place amongst the fish along with a handful of frozen peas

Pour the white sauce over the fish

When boiled, mas your potatoes in a saucepan with the milk and tbsp of butter until soft and creamy

Spread the mashed potato on top of the filling and spread evenly with a fork

Mix the fresh breadcrumbs with the remaining cheddar and sprinkle over the top 

Place in the oven for 30-35 minutes 

Serve with your choice of veg
