It's always a horrible feeling when you are home alone, even at the grand old age of 24!
Still living at home, and working long hours, means that 9/10 times my dinner is made for me when I get in from work, and usually on the table as I walk through the door!
This week, however, my mum is sunning herself in Turkey and my Dad works various shifts at work, so I have been fending for myself for the last week.
I say fending for myself as though it is a bad thing, it isn't really, I just have to exercise my culinary skills for when I finally move out.
Getting in from work most nights arouns 7.30/8pm I am usually looking for a quick alternative if I am making my own food.
Last night I couldn't be bothered to make myself a full meal, so instead I raided the freezer.
What did I find?
An Amy's Kitchen Veg Lasagne! Great!
60 minutes in the oven, some veg and salad, and my meal was ready!
I could smell the basil and tomato sauce as I took it out of the oven.
I like my lasange very cheesey...what can I say! So I have to admit I did add a little bit more cheese to the top of the lasagne before I bought it out of the oven.
I have to say, it is possibly the nicest veggie lasagne I have tasted...actually I am going to even put it up there with the classic dish my mum makes!!
Apart from my cheese addiciton and having to put more on the top...it was a great taste.
Amy's Kitchen, you have done it again.
You have given me even more excuses to be lazy and just pop something in the oven rather than cook it myself, and if I am honest, I don't think I'd be able to get it tasting that good!
Oh and yes, it is light on the Kcals too...only 333 per packet!
Result!!
